 Black Tea Processing

  • Plucking

We pick fresh tea leaves form our own company tea mountains, which includes a terminal bud, a bud and one young leaf, a bud and two young leaves, a bud and three young leaves. And then directly deliver to the factory as soon as possible, especially in hot weather, because the gathering fresh tea leaves can give out heat in this process, which is bad for keeping tea leaves fresh and influence the quality and flavor of the tea. Thus for avoiding the tea being bitter and sour, we have to minimize the time in transit. Tea leaves are typically picked during early spring and early summer or late spring. Picking can done by also hand and machine. 

  • Withering

The tea leaves will begin to wilt soon after picking, withering is used to remove excess water from the leaves and allows a very slight amount of oxidation. The leaves can be either put under the sun or left in a cool breezy room to pull moisture out from the leaves. The leaves can’t lose too much or less moisture during withering, because this process is the key to the taste of the tea. The withering time changes according to the tea leaves quantity and withering ways, around 3-6 hours.

  • Disruption:

The teas are bruised or torn in order to promote and quicken oxidation in this process. The leaves may be lightly bruised on their edges by shaking and tossing in a bamboo tray or tumbling in baskets. More extensive leaf disruption can be done by kneading, rolling, tearing, and crushing, usually by machinery. Disruption helps oxidation and changes the taste profile of the tea. The disruption time changes according to the types of tea leaves, around 1-1.5 hours.

  • Cutting

Make the massive shape of the tea into small pieces, until to hook shape as picked.

Fermentation

For teas that require oxidation, the leaves are left on their own in a climate-controlled room where they turn progressively darker. This is accompanied by agitation in some cases. In this process the chlorophyll in the leaves is broken down, and its tannins are released or transformed. Oxidation is highly important in the formation of many taste and aroma compounds, which give a tea its liquor color, strength, and briskness. The temperature and time should be controlled well by tea maker depends on the different types of tea to make. It also needs several hours.

  • Drying

The drying time and temperature differs from the tea leaves types. Baking is usually the most common. Great care must be taken to not over-cook the leaves.

  • Aging

While not always required, some teas as black tea required additional aging, secondary fermentation, or baking to reach their drinking potential. The purpose is to enrich and promote tea flavor, bring perfect drinking experience to customers.
